Cashew Icing

This is a vegan version of cream cheese icing. It is good on cake or cinnamon buns. It's a healthier version of icing sweetened with maple syrup instead of sugar.


1 cup cashews

1/4 cup water

1/2 lemon juiced

2 tbsp maple syrup

1 tsp vanilla extract


Put cashews, water, lemon juice, maple syrup and vanilla into high power blender and blend until creamy and smooth. Store in refrigerator. Icing will thicken as it sits.
