Vegan Lasagna

This is a favorite in my house. Lasagna is a great dish for a big crowd or for a special occasion. Serve with some garlic bread and it will be an Italian feast. Anyway to add vegetables to a dish will just make it more nutritious. While I like to switch it up, any of these vegetables go great in a lasagna; spinach, zucchini, mushrooms, lots of garlic, onion. I cook this on the stove or in the oven.

1 box of lasagna noodles

3 cloves garlic

1 jar sauce

1 cup chopped mushrooms

1 small onion chopped

4 cups spinach

salt and pepper

Italian seasoning

vegan mozzarella (optional)

cashew cream; follow cashew cream recipe

In bottom of pan or baking dish add some sliced onion and small amount of sauce and water. Add layer of noodles. First spread cashew cream, then add chopped onion and mushrooms. Then, spread sauce, sprinkle garlic and spices. Next, add layer of spinach. Then repeat the layers starting with noodles again. Repeat this process until you run out of items. On top layer at end can sprinkle with vegan mozzarella. If baking, cover and cook about 30 minutes on 350 degrees. If cooking on stove top, it will be quicker depending on type of cookware. Let cool and set before eating. Bon appetit!
