Vegan One Pot Vegetable Teriyaki Stir Fry

This is a healthy dish full of flavor and texture. Made with broccoli, carrots and cabbage and mushrooms for optimal nutrition. This dish works well with brown rice or quinoa. Preferably already cooked or frozen to make it a simple one pot dish.

1 cup onion chopped
3 cloves garlic chopped
1 tbs minced ginger
1/2 cup sweet mini peppers chopped
2 cups shredded carrots
1 cup shredded red cabbage
1 cup green beans
1 head broccoli cut into florets
1/2 cup mushrooms sliced
1/2 cup roasted cashews
2 cups cooked or frozen brown rice or quinoa
Teriyaki Sauce;
1 (8oz) can crushed pineapple
1/4 cup soy sauce
2 tbs agave
1 tbs rice vinegar
2 tsp Sriracha
1 tsp sesame oil
1/2 tbs Chia seeds
Saute onion and garlic in a little water. Add in ginger and peppers. Then, add in the rest of vegetables and a bit more water. Cover and let vegetable cook 5 more minutes. Next add in rice or quinoa. Let cook until vegetables and rice or quinoa is cooked through. While it is cooking, prepare Teriyaki sauce. Mix all ingredients in a bowl. Then, blend in a blender or use an immersion blender until smooth. Pour over rice and vegetables adding cashews and heat through.
