Zoodle Artichoke Pasta Salad

This raw Mediterranean style pasta salad is great for lunch or dinner. It is made with sundried tomatoes, olives and artichoke. Packed with flavor, fiber and greens, this pasta salad is a definite crowd pleaser.

1 large or 2 small zucchini’s
1 cups spinach chopped
1 6 ounce jar of marinated artichokes cut in quarters
3 tbs chopped onion
3 tbs olives chopped (black or kalamata)
1/2 cup sun-dried tomatoes in oil chopped
1 tsp salt
First, zoodle your zucchini. Place zoodles in a large bowl. Chop all vegetables and place in a bowl. Next, add pink salt. Mix well and serve. This dish pairs well with sourdough or garlic bread. Enjoy.
