Cucumber & Tomato Salad

This is my favorite dish and I eat it almost everyday. I grew up eating similar cucumber salads, but they were made with either oils or mayo. This is a healthier version that I have grown to love. Cucumbers and tomatoes are actually fruits and they are packed full of nutrition and hydrating water. Cucumbers are a good source of chlorophyll and vitamins A, C and K and tomatoes are one of the best sources of lycopene which has been shown to protect from cancer. Dill is a powerful herb and has anti-inflammatory properties. The coconut yogurt provides healthy probiotics and has anitfungal properties. Eat this salad daily to maximize your nutrition. Enjoy with lunch or dinner.


1 large English cucumber sliced thin

2 tbsp lemon juice

1/4 tsp garlic salt

4 tbsp of plain unsweetened coconut yogurt

1/2 cup halved cherry tomatoes

1/4 cup fresh dill stems removed


Slice cucumber and place in bowl. Add lemon juice and stir. Next, add garlic salt and stir. Then, add coconut yogurt and stir blending well. Finally, cut tomatoes and dill then add to bowl and mix well. You can eat this salad right away or let sit in the refrigerator and eat later or the next day. It tastes great both ways. Enjoy.
