Banana Bread

One of my best creations. This low fat, low sugar version of banana bread is still sweet, warm and comforting. Great in the morning or for a snack or dessert.

2 mashed ripe bananas

1/2 cup sugar

1 tbsp coconut oil

1 1/4 cup all purpose flour

1 tsp salt

1 tsp baking soda

1 cup plant milk or can substitute with water.

1/4 cup chocolate chips (optional)

Preheat oven to 350 degrees. Grease pan with coconut oil. Mash bananas. Add sugar and coconut oil. Stir until thoroughly mixed. Add flour, salt, baking soda and milk. Stir until well combined. Add chocolate chips.


Bake in bread loaf for 45 minutes.

or Bake in 8x8 pan for 30 minutes.

Enjoy warm or cooled.
