Broccoli Salad

Here's an easy broccoli salad that is a great side dish for any meal. Broccoli is a cruciferous vegetable that has anti cancer properties. It is high in vitamin C, iron and is a good source of fiber. This salad has a nice melody of vegetables with peppers and tomatoes with the broccoli.


1 small head of broccoli chopped into small pieces.

1 cup chopped mini peppers (yellow and orange)

2 medium tomatoes chopped

1 cup chopped cilantro (optional)

2 tablespoons fresh lime juice (about 1 lime)

1 tbsp olive oil (optional)

1/2 garlic powder

1/2 tsp sea salt

1/4 tsp pepper



In a small bowl, combine oil, lime juice and spices. Chop broccoli into small bites. Chop peppers and tomatoes. Add chopped cilantro if desired. In another bowl, combine and mix all vegetables together. Then pour in and mix dressing on salad. Eat right away or chill to serve later.
