Raw Zoodle Artichoke Pasta Salad

This raw Mediterranean style pasta salad is great for lunch or dinner. It is made with sun-dried tomatoes, olives and artichoke. Packed with flavor, fiber and greens, this pasta salad is colorful and a definite crowd-pleaser.

1 large or 2 small zucchini’s

1 cups spinach chopped

1 6 ounce jar of marinated artichokes cut in quarters

3 tbs chopped onion

3 tbs olives chopped (black or kalamata)

1/2 cup sun-dried tomatoes in oil chopped

1 tsp salt


First, zoodle your zucchini. Place zoodles in a large bowl. Chop all vegetables and place in a bowl. Next, add pink salt. Mix well and serve. This dish pairs well with sourdough or garlic bread. Enjoy.
