Vegan Butternut Squash Soup

This soup is warm and cozy. It is perfect for the cool fall weather and will get you in the mood for the holidays. It is one of my favorite comfort foods. It is sweet with cinnamon and a hint of ginger. Butternut squash is loaded in vitamin A and is a good source of vitamin C and potassium. It makes a healthy and festive soup.


1 butternut squash

2 cups broth

2 1/2 cups coconut milk

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp pepper

1/2 tsp ginger powder

1 tsp cinnamon

1 tbs agave

2 tbs sugar




Cut butternut squash in half and remove seeds. Bake on 400 degrees for 45 minutes face down. Let cool down then scoop out squash into pan. Add all the ingredients and stir. Cover and bring to a boil. Turn down and let simmer 5 minutes. Lastly, blend with an immersion blender. Serve in bowls or mugs and top with pumpkin seeds. Enjoy this warm cozy soup for the holidays.
