Cabbage Salad

This is a delicious cabbage salad. It is made with purple cabbage one of the cruciferous vegetables and is anti-cancer food. The phytonutrient anthocyanin gives it its purple color and anti- inflammatory and anti-cancer benefit. It is high in vitamin C, calcium and other minerals. This is one of my favorite easy dishes. I came up with this version and combination of apple, raisins and pecans. It is a sweet and savory dish and is great as a main course or as a side dish. It is a great dish to serve or bring for any gathering or occasion.

1/2 head purple cabbage shredded
1 apple shredded
1/4 cup raisins
1/4 cup pecans chopped
1/4 cup cilantro chopped
1/4 cup celery chopped (optional)
2 tbsp cashew butter
4 tbsp water
1/2 tsp sea salt
Shred apple and cabbage. Add raisins and chopped pecans. Add lightly chopped cilantro. Add celery if desired. Mix and blend well. In a small bowl, mix cashew butter and water until makes a pourable dressing. Add more water if needed.
Toss all together and serve or chill. Double recipe if making for a crowd. This is colorful, delicious and nutritious dish that everyone will love.
