Chickpea Salad

This is a versatile dish that you can modify or change to your liking. It is never dull because you can switch up the ingredients for a different taste and texture. This is definitely one my favorites. You can serve it on bread, a tortilla, or even on pasta as a pasta salad. Chick peas are a good source of plant protein containing all the essential amino acids that we need from our diet, as well as a they are a good source of fiber.

1 can rinsed and drained chickpeas
1 celery stalk
1/4 cup onion
1/4 cup diced pickle or olives or both
1/2 cup diced cherry tomatoes
Some other great options to throw into this salad includes dried cranberries, raisins, cucumber, grapes, chopped pecans, sunflower seeds and hemp seeds.
Dressing:
2 tbs Tahini
1 tbs yellow or Dijon mustard
1 tsp agave or maple syrup
or
vegan mayonnaise
Chop chickpeas in a food processor or simply mash with a fork. Add the rest of ingredients. Serve on bread or wrap with lettuce or with pasta.
