Chocolate Chip Oatmeal Raisin Cookies

If you like chocolate and peanut butter, you will like these easy healthy version of chocolate chip cookies. Made with rolled oats and peanut butter these cookie are sugar free made with the natural sweetness of ripe bananas. For an even healthier twist, you can throw in some chick peas for added fiber and nutrients.

2 ripe bananas mashed

1/3 cup peanut butter

1/2 tsp vanilla extract (optional)

1 1/2 cups rolled oats

2 tbsp raisins or other dried fruit

2 tbsp coconut (optional)

2 tbsp chick peas rinsed (optional)

2 tbsp vegan chocolate chips

Preheat oven to 350 degrees. Line baking pan with parchment paper. Mash bananas in a mixing bowl. Then add peanut butter and vanilla. Add in rolled oats and blend well. Then add in fruit, chick peas and chocolate chips. Form into balls and place on the baking sheet. Press flat with a fork or spoon. Bake 10 to 15 minutes. Let cool and enjoy!
