Cinnabun Oatmeal Bake

A healthy alternative to a cinnabun. This recipe is just as sweet and delicious as a cinnabun, but made with oatmeal and dates. This recipe is good for desert too.

1/4 cup applesauce
1/4 tsp vanilla
1/4 cup plant milk
1/2 cup old fashion oats
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
Date paste:
1/4 tsp cinnamon
2 medjool dates (soaked in hot water until soft)
Blend or mash cinnamon and dates by fork or in a food processor.
Icing:
1/2 cup cashews
2 tbsp agave
1 tsp lemon juice
2 tbsp plant milk
2 tsp water
Blend all ingredients in blender.
Preheat oven to 350 degrees. Grease ramekin with coconut oil. Mix applesauce, vanilla and plant milk. Then, add oats, cinnamon, baking soda and salt. Mix together and pour in ramekin. Then, swirl date paste into oats and press in. Bake for 20 minutes until golden brown and top with cashew icing.
