Vegan Homemade Noodle Soup

My daughter, a natural cook, created this soup recipe at the age of fourteen. It is a vegan version of the classic chicken noodle soup that is so warm and comforting and has the taste of the classic noodle soup, but with a twist using vegan sausage links.

1 cup onion chopped
1 cup celery chopped
1 cup carrot chopped
2 cloves garlic minced
1/2 cup chopped leak (optional)
1 bay leaf
2 tsp sage
1 tsp turmeric
1 tsp garlic powder
1 tsp parsley
1 tsp thyme
1 tsp olive oil
4 cups broth
1 cup noodles
1-2 Field Day apple sage links cut and sliced. (Optional, if omitted add 1 tsp salt.)
Saute vegetables in water for 5 minutes. Add sausage, noodles and broth. Add spices and cook until noodles are ready. Then add oil. Salt and pepper to taste. Enjoy!
