Raw Creamy Tomato Soup

This raw version of tomatoe soup is creamy and delicious. It is a warm and cozy favorite soup that is a must have on any diet. Using a dehydrator to soften the tomatoes gives it more of a traditional feel. Making this soup raw preserves the enzymes and nutrients for optimal nutrition.

2 vine tomatoes cut into quarters
1 cup cherry or plum tomatoes cut in half
1 small clove garlic chopped
1/2 a medium onion chopped
1 handful of fresh basil leaves
1/2 tbsp of olive oil
2 tbsp nutritional yeast
1/4 tsp oregano
1/4 tsp thyme
1/2 tsp sea salt
1 cup water
3 tablespoons cashew cream:
1 cup soaked cashews
1/2 -1 cup water blended until smooth and creamy. I like it a bit thicker for the soup.
In a bowl add chopped tomatoes, onion, garlic, fresh basil leaves and olive oil. Place in dehydrator for about 5 hours on 118 or until soft and fragrant. If you are not able to put a bowl in your dehydrator, then spread on sheet or plate and place in dehydrator. Once your vegetables are ready, place into high speed blender. Add spices, salt, nutritional yeast and one cup of water and blend in soup mode till warmed. Pour into bowl and add 1 tablespoon of cashew cream and swirl in or add in 3 tablespoons to blender and blend. Smooth over bubbles with back of spoon for better appearance. Makes about 3 bowls. Enjoy this creamy tomato soup for lunch or dinner.
