Raw Vegan Zucchini Salad

This mock raw vegan version of chicken salad is just amazing. It is a spin off from my chickpea salad recipe that has been one of my favorites for years. This raw version is nutritious and alkalizing. It is very easy to digest and packed full of life and nutrition. Zucchini, dill and cucumber gives it that classic salad taste.

1 large zucchini
1 cup cucumber chopped
1/2 cup onion chopped
1/2 cup fresh dill chopped
1 celery stalk chopped
1/2 cup tahini
1 tsp Dijon mustard
1/2 tsp garlic powder
1/2 tsp dried parsley
1/2 tsp dried chives
1/2 salt or salt to taste
Peel zucchini (optional, but best result). Dry with a paper towel. Cut zucchini into large pieces and place in a food processor. Pulse or chop into small pieces. Do not over chop. Once done pour into bowl and add other chopped vegetables. Add dill, spices and salt. Stir and blend well. Then, add tahini and Dijon mustard. Give one last mix. There are many different ways to eat this delicious raw salad. Eat by itself or add it to your salad on a bed of greens or make a nice wrap by adding a scoop to a leaf of Romaine lettuce and roll. Enjoy this satisfying dish for lunch or dinner.
