Rolled Oat Fruit Bake

Here is a delicious fruit bake. It it loaded with berries which are full of antioxidants and high in fiber from the oats. In addition, throwing in some chia seed for a good source of omega 3's. Enjoy for breakfast or a snack.

3 cups frozen berries

2 tbs agave or sugar

1/4 cup of sugar

3 tbs chia seeds

1 1/2 cup ground rolled oats

1 cup rolled oats

1 tsp baking soda

1/2 tsp salt

1 -2 tbs coconut oil melted

2 tbs coconut flakes

2 tbs raw pumpkin seeds



Preheat oven to 350 degrees. Line 8x8 baking dish with parchment paper. In a food processor blend one and a half cup of oats to make flour. Next, add berries, 2 tbs of sugar and chia seeds to small pan and heat for about 10 minutes stirring often. In a bowl add oat flour and oats with baking soda, salt and sugar and mix together. Then drizzle with melted coconut oil and blend until forms a dough. May add more melted oil if needed to get crumbly consistency. Press half the dough into baking pan and spread out. Then pour with berry sauce in pan covering bottom layer. Next, spread remaining oats on top of berry sauce and spread evenly. Sprinkle coconut flakes and pumpkin seeds on top. Bake 30 minutes and then let cool before cutting.
