Vegan Split Pea Soup

Enjoy this is a nice and hearty vegan version of split pea soup packed with protein and fiber and tastes delicious.

2 cups slit peas
1 medium onion
1 large potato (wash and leave skin on)
2 carrots
2 celery stalks
1 Field Roast Apple Sausage Link chopped (optional)
2 tsp parsley flakes
1 bay leave
1 tsp salt
1 tsp pepper
1 tbsp nutritional yeast
2-3 cups water
2-3 cups vegetable broth
Chop vegetables, potato and sausage. Saute vegetables in a little water. Once softens add split peas, water and broth. Add spices and stir. Cover and cook until a low boil, then turn to low boil and cook until peas are nice thick consistency. Use an immersion blender to blend until your desired consistency. Leave a little chunky for a heartier feel.
