Vegan Asparagus Soup

Enjoy this creamy and nutritious asparagus soup. This warm and light soup is great for any time of the day or year. Asparagus is rich in folate, vitamins A, C and K, as well as, a good source of fiber. It is also a good way to include more greens in your diet.

1 cup onion

4 cloves garlic

4 small potatoes cubed

1 pound of asparagus cut into chunks

2 cups of vegetable broth

1 cup coconut milk

1/2 cup of cashews

1 tsp salt




Add chopped onion, garlic, potatoes, asparagus to pan. Add one cup of broth to the pan. Cover pan and cook on medium heat for 30 until simmer. Turn down and cook on low for 5 more minutes. Add cashews and coconut milk to blender. Once vegetables are fork tender, pour into blender. (If using a glass blender, let cool first.)

Add 1 tsp salt and blend until smooth and creamy. Add back to the pan and additional cup of broth. Stir and heat until warm. This is a delicious and filling soup that is great for lunch or dinner. Enjoy.
