Vegan Creamy Tomato Soup

This is definitely a favorite in our house. We can not get enough of this delicious creamy soup. It leaves you feeling full and it is loaded with fiber and nutrition. Tomatoes are abundant in lycopene, a powerful antioxidant, that has been shown to reduce risk of cancer.

1 cup onion

1 can crushed tomatoes

1 1/2 cup vegetable broth

1 tsp oregeno

1 tsp basil

1 tsp salt

pepper to taste

2 tbs sugar

1/2 cup cashews

1/2 cup water

Pumpkin seeds (optional)



Saute onion in water. Once fragrant, add crushed tomatoes. Add spices, then broth. Let simmer. In a blender, add cashews and water. Blend until smooth. Add to soup. Let simmer for five to 10 minutes. Take off burner and blend with immersion blender. Serve and top with pumpkin seeds.
