Vegan Potato Soup

This is a delicious and hearty soup. It is a simple and quick recipe that is easy to make on short notice. It is great for lunch or dinner.


4-5 medium to large potatoes peeled

1 cup onion

3-4 cups vegetable broth

1/2 cup plant milk

1/2 cup unsweetened plain plant yogurt

1 tsp salt

1/2 tsp pepper

2 tbsp chives

1/2 cup vegan shredded cheddar cheese (optional)


First, add chopped onion to pan. Then, peel and quarter potatoes. Add to pan with 1 cup broth or water. Cook on med heat with lid on until boil, then turn down to low until fork tender. You can stir occasionally as needed. Then, add milk and rest of broth until desired thickness. You want creamy and soup like consistency. Not too thick like mash potatoes, but not too thin and runny. Then add yogurt, salt and pepper to taste. Lastly, top with chives and cheese. Warm through. If adding cheese, cover and heat through until cheese is melted.


This goes great with a side salad or serve by itself as main course. Enjoy!
